Blueberry Chia Pudding

blueberry chia pudding

I have no idea what day it is! (You too?!) Husband and I have embraced this slower pace and settled into some new routines. Committed to staying healthy and eating well, we get outside every day and exercise. And I’ve challenged myself to keep trying new recipes – like this Blueberry Chia Pudding. Delicious enough for dessert, this has become a go-to breakfast option. Continue Reading →

Almond Biscotti with Dark Chocolate & Sea Salt (Gluten Free!)

The older Husband and I get, the more we’re into routines. If one or both of us are traveling, we FaceTime at the end of the day. We don’t discuss our thoughts on a movie we’ve seen, until we have a post-movie snack and maybe a nightcap.  We typically go to church on Saturday nights, after which we can be found at our favorite Mexican restaurant – in our usual spot, with our usual order. And on Sunday mornings, our ritual includes coffee and watching CBS Sunday Morning. We’ve recently taken that routine up a notch, thanks to Almond Biscotti with Dark Chocolate and Sea Salt. Dark Chocolate Energy Bites

I just grabbed one of these Dark Chocolate Energy Bites as a reward for going to the mailbox — it’s around -50º below zero with windchill!

Truth be told, we weren’t supposed to BE in the frozen tundra today. We had been invited to join a group of dear friends this week in Mexico — where, by my calculations, there’s about a 135º temperature difference at the moment. Continue Reading →

Blueberry-Lemon Icebox Cake

The past several months have been a blur. Between the holidays, seemingly endless entertaining, travel and launching a new company, I’ve relied more than ever on a well stocked freezer. Not just for surviving the oh $%&*#, it’s 5:30 and I haven’t even thought about dinner moments, but for taking some of the stress out of entertaining as well.

Nutty Granola Bars {These are for you, Donny Osmond!}

nutty granola bars

I’m a little bit country
And I’m a little bit rock ‘n roll
I’m a little bit of Memphis and Nashville
With a little bit of Motown in my soul
I don’t know if it’s good or bad but I know I love it so
I’m a little bit country, I’m a little bit rock ‘n roll…

My 70’s crush on Donny Osmond made me want to be a little country to his “rock ‘n roll.” I knew every cheesy dance move to the song, and daydreamed about taking Marie’s place, if say, she called in sick or fell off the stage. Never mind that I couldn’t sing. {Why yes, I was a huge nerd. How did you know?!?}

Regardless of whether or not you enjoyed the song, the lyrics definitely reinforced the belief that opposites attract.

Pumpkin Roulade with Ginger Buttercream

pumpkin roulade with ginger buttercream

Worst. Dinner. Party. Ever… The first problem was attempting to host an office holiday party for associates who really didn’t want to come. The second problem was that I didn’t know how to cook. However, as often happens, what was awkward, horrifying and embarrassing at the time, is hilarious in hindsight. And by “hindsight” I mean twenty plus years of it. Continue Reading →

Huckleberry Zucchini Bread

When you bring home souvenirs from a trip, do you pick up a coffee mug? A refrigerator magnet? Maybe a t-shirt? To commemorate an incredible vacation in Idaho, I just carefully transported — in a cooler, for the 21-hour drive covering 4 states, a very precious memento. A small ziplock bag full of… huckleberries. Continue Reading →

Tropical Avocado Brownies {Don’t invite me to your costume party.}

Tropical Avocado Brownies

We all have our quirks. But my list might be longer than the average person’s…

I don’t drink beverages that fizz, “echo songs” drive me nuts, and I’ve never been one for costume parties. In fact, I’d compromise on either of the first two just so I didn’t have to go to the last one. I’ll either make up a “previous commitment” (as in, I previously committed – to myself – that I would stay home and catch up on “House of Cards”) or I’ll be the one that shows up sans costume, as if I’m on my way to or from somewhere else.

Some of my favorite people are flavored similarly to my favorite foods :: just enough sweet with a big pinch of salt.

Fudge Frosting

Today would have been my dad’s 89th birthday.

Tonight, Husband and I will toast him with a little Scotch, and a piece of white cake with my mom’s Fudge Frosting. And, as we always do on February 13th, we’ll share some of our favorite memories of “Big Dave.”
