Chicken Salad Sandwiches with Smoked Almonds

chicken salad sandwiches with smoked almonds

Who knew a chicken salad sandwich could bring out the rudeness in me AND turn me in to a temporary stalker?! In my defense, it wasn’t just ANY chicken salad sandwich, it was a Chicken Salad Sandwich with Smoked Almonds…

Pea Bruschetta with Lemon & Mint

pea bruschetta with lemon and mint

My friend Elaine isn’t in town that often, but when she is, we do our darndest to schedule lunch, as well dinner with our boys. A new restaurant opened in the cute little nearby suburb of Excelsior recently, and it sounded like a perfect place for a summer al fresco dinner with our dear friends. And when I checked out the menu beforehand, I knew I’d be ordering their Pea Bruschetta appetizer. Continue Reading →

Remodel with a Purpose {Parmesan, Almond & Rosemary Cocktail Cookies}

parmesan rosemary crackers

If you stopped by our house after the kitchen remodel, you would immediately notice the upgraded appliances, new wood floor or expanded center island. But perhaps the most important element of the project is something you can’t see – and it was “installed” with a Sharpie. Continue Reading →

Hot Sausage Canapes {aka “Man Squares”}

hot sausage canapes

The first time Husband had these Hot Sausage Canapes, he immediately renamed them “Man Squares.” They are perfect to keep on hand for those times when the guys gather at your house to watch the game. Believe me, they’ve made me a hero during more than one football/hockey/basketball playoff. Continue Reading →

Chocolate-Cayenne Cocktail Cookies

chocolate cayenne cocktail cookies

OK, first of all, these are not for dessert. So you can’t paint me with the “she claims to eat healthy, but she’s posting all these naughty desserts” brush. Hence the phrase “cocktail cookies.”

I don’t have many home-runs my first time “at bat” with a recipe, but this one was out of the park. Continue Reading →

Sweet Potato-Poblano Soup {spend a day with the nerds}

poblano soup

If you made a New Year Resolution this year {there’s a 55% chance you did} there’s a 1-in-3 chance that your resolve didn’t last past January. Often, that’s because the goals aren’t clear or measurable, or there’s no strategy for getting there. I have something that might help – even at the risk of you thinking me “nerdy.”  {I’ll get to the Sweet Potato-Poblano Soup in a sec’.} Continue Reading →

Healthy Chips :: Pears & Sweet Potatoes & Bananas, oh my!

pear chips

How’s that healthy-eating New Year’s Resolution going for you? If you’re like most people who make one, there’s a 29% chance that it’s faded into a distant memory already. I don’t know about you, but the hardest part of trying to eat healthy is finding snacks that don’t “break the bank” calorie or carb-wise.  I crave something with CRUNCH.  Enter Pear Chips – and Sweet Potato Chips, and Kale Chips and yes, Banana Chips. Vegetable Pot Stickers {a family affair}

vegetable pot stickers

One of the things that makes family meals fun is getting everybody involved. Husband and I have my sister’s family over for Sunday dinners whenever our schedules cooperate, and most often, it’s a hands-on affair. Sometimes we make our own pizzas, and recently, we tackled homemade ravioli. On “Asian Night”, I might be getting ingredients together for Pad Thai, while I assign the assembly of Vegetable Pot Stickers to my niece and nephew. Continue Reading →

Grilled Pizza Crusts

{Note: I wrote this post while on vacation – and promptly forgot to share it! Today, I’m making a big batch of these Grilled Pizza Crusts for an upcoming party, which jarred my memory. Enjoy!}

Greetings from my happy place! Husband and I are in the middle of our annual western vacation in Idaho. And by vacation, I mean long days which usually end with us filthy, sweaty, sore and exhausted. We love it.

Endive w/ Blue Cheese, Orange & Walnuts

endive blue cheese orange walnuts

It’s a salad you can eat with your hands. My mom calls these “little boats.” I call them a perfect party food. Bursting with fresh flavor, Endive with Blue Cheese, Orange & Walnuts makes a perfect addition to a cocktail or dinner party. Besides offering a lighter option to the usual cheese and crackers, it’s a great way to serve the salad to guests while you’re still working on dinner.

Fresh orange, honey-toasted walnuts and blue cheese sit on a Belgian endive leaf, drizzled with a balsamic-orange reduction and sprinkled with fresh chives and salt and pepper. Continue Reading →
