Almond, Dark Chocolate & Sea Salt Cookies
  • 2 cups almond meal / flour
  • ¼ tsp soda
  • ¼ tsp sea salt
  • ¼ cup honey
  • ¼ cup coconut oil
  • 1 tsp vanilla
  • 1 cup finely chopped dark chocolate or chocolate chips
  1. Preheat the oven to 350ยบ. Line a cookie sheet with parchment paper.
  2. Place almond meal and next 5 ingredients {through vanilla} in bowl of mixer and mix until combined well. Fold in chocolate chunks or chips. Dough will be somewhat crumbly.
  3. Roll into small balls and place on the parchment paper. Use the bottom of a glass to gently press down the cookies. If the glass is sticking too much, wet it with water on the bottom.
  4. Bake for 8 minutes, or just until done. Cookies will not brown much.
  5. Slide parchment onto wire racks to cool. Allow to cool on a wire rack before removing from parchment.
