Amy Grant's Chicken Salad

  • 1 whole chicken
  • 1 large can chicken broth
  • 1 bunch celery
  • 3 cans crushed pineapple (#2 can size)*
  • 1 jar mayonnaise
  1. Boil chicken in chicken broth for extra flavor.
  2. Debone chicken and cut up with scissors into bite size pieces in a large bowl.
  3. Dice celery.
  4. Add pineapple that has been drained thoroughly.
  5. Mix your ingredients together.
  6. Now add 1 cup of mayo at a time. Taste as you go along. You can add mayo until you get the right texture/taste for you.
  7. * #2 can size is 20 ounces
