Banana “Ice Cream”

Are you already feeling the annual “shrinking of the pants” that comes with holiday indulging? Me too! You know what we need? ICE CREAM! Specifically, totally guilt-free and amazingly delicious Banana Ice Cream.

I don’t have much of a sweet tooth – and ice cream doesn’t really agree with me. But awhile back I had an inexplicable craving for banana ice cream.

Minneapolis has many great local ice cream shops, and if we were walking by one, I’d go in to see if “banana” was on their flavor-list for the day. Then I’d ask for a taste. That was all I needed… {For the record, I wouldn’t do this unless someone in the group was ordering something!}

The other day I was browsing some healthy-eating sites and stumbled upon some recipes for guilt-free {and dairy-free!} “ice creams.” Many of them still required some cooking, and the addition of sugar or a sweetener. Most still required an ice-cream maker. Not this one. This treat doesn’t even need a recipe, but I’ll give you one anyway.

Banana "Ice Cream"
 
Ingredients
  • 7-8 large, ripe bananas, sliced
  • 1 cup coconut cream
Optional Ingredients
  • chopped peanuts or pecans
  • cocoa nibs
  • nut butter (swirl in before freezing)
  • chopped dark chocolate
Instructions
  1. Place bananas in baggie and place in freezer for at least 5 hours.
  2. Pour milk into blender container, followed by frozen bananas.
  3. Puree until smooth. Stir in optional ingredients.
  4. Serve immediately. If there's any left, spread into container and store in freezer.
Notes
Unripe bananas can give off a slight bitter taste when frozen - make sure to choose bananas that are starting to get brown spots on the skins.
