Almond, Dark Chocolate & Sea Salt Cookies {plus BIG Giveaway!}

My two worlds have collided – and I couldn’t be more excited!  My “day job” in the music industry means I get to work with radio stations and artists across the country… I love my job! And, of course, I love playing in my Raisin & Fig “sandbox.” Today, I get to introduce you to the husband-and-wife team that make up the band Love & The Outcome.

A few years ago, Jodi and Chris – originally from Manitoba, Winnepeg – decided to pursue their musical dream. They sold everything they had and moved to the US.

Well that’s not completely true. That “sell everything” part excluded his favorite amplifier and her KitchenAid mixer. {That’s a girl after my own heart, right there!}

The sacrifices are paying off. Blessed with several hits and awards, Jodi & Chris just released a follow-up to their first album – it’s an EP called Ocean Way Sessions:Live.

I caught Jodi between a radio interview and hopping a plane to join a Caribbean cruise with fans. She was in her kitchen, making these awesome Almond, Dark Chocolate & Sea Salt cookies {using her KitchenAid, of course}.

Jodi is famous for these cookies. She often brings them to meetings with the band’s record label. When we talked, she and Chris were making a batch to take along on the cruise.

I don’t know how they found the time {did I mention they just released a live EP last week?!}, but they made a video just for you.

I was skeptical when Jodi sent me the recipe… I haven’t had a lot of luck with gluten-free baking. But these were simple and fabulous! The ones you see in the picture were gone about 5 minutes after I took the photo.

Almond, Dark Chocolate & Sea Salt Cookies
Serves: 18
  • 2 cups almond meal / flour
  • ¼ tsp soda
  • ¼ tsp sea salt
  • ¼ cup honey
  • ¼ cup coconut oil
  • 1 tsp vanilla
  • 1 cup finely chopped dark chocolate or chocolate chips
  1. Preheat the oven to 350º. Line a cookie sheet with parchment paper.
  2. Place almond meal and next 5 ingredients {through vanilla} in bowl of mixer and mix until combined well. Fold in chocolate chunks or chips. Dough will be somewhat crumbly.
  3. Roll into small balls and place on the parchment paper. Use the bottom of a glass to gently press down the cookies. If the glass is sticking too much, wet it with water on the bottom.
  4. Bake for 8 minutes, or just until done. Cookies will not brown much.
  5. Slide parchment onto wire racks to cool. Allow to cool on a wire rack before removing from parchment.

    Ahhh love this Morgan! First of all love..Love & The Outcome! They rock and love that she shared this special recipe. I printed it out and will give it a try! By the way…I do not even have a Kitchen Aid mixer at all…I cook a lot…and said the other day how I would love to have one and then I see this! Wow! My favorite kitchen item happens to be my Kitchen Aid blender! Thanks for sharing this great blog!

    I can’t wait to try this recipe! It looks scrumptious! And a Kitchen Aid mixer!?!?! For real? I had one years ago and then got talked into buy a Bosch mixer. BIG MISTAKE!

    I am making these cookies TO-NIGHT! Since I don’t currently own a KitchenAid mixer-my must have kitchen tool is my electric hand mixer. So winning a Kitchen Aid mixer would be SO AWESOME.

    These look so delicious! I have a friend who is gluten free and I’ve been making new recipes for her to try so I will definitely be making these for her soon! And Love & The Outcome….one of my favorite bands! I first heard them at the 2014 Winter Jam concert and just loved their music!

    I cannot wait to try this recipe! These cookies seem to be a happy medium between his likes (sweet/salty) and mine (anything chocolate) AND they’re gluten free which means I can eat them without fear! YAY!

    Believe it or not, I’ve made it through most of my adult without a stand mixer (sadly, I’ve murdered several poor innocent hand mixers though). It would be quite a treat to have the right tool for the job and end my hand mixer tyranny. :)

    3) My favorite kitchen tool right now is a Ninja Blender kit that was gifted to me… it’s got a food processor attachment, and some single serve “bullet” style blending attachments. Never had a KitchenAid mixer, but could do a LOT with it!

    I’d have to say my favorite kitchen appliance is my Blendtec. In 40 seconds, I can have homemade almond butter. Yummy!

    I’m in desperate need of a new mixer. My hand held was overused this summer when I blended “spiralized” zucchini to make a quick zucchini bread! I thought it would be faster to spiralize the zucchini (and safer for my fingers) instead of grating. The lesson was learned the hard way. LOL!

    I am a monster fan of my Cuisenart food processor (I think it is like from the 80s so heavy on the “like” there). I got it second hand from a co-worker of mine and it is AMAZING! It is also as heft as a 7-year-old who drinks loads of milk. I have been making no-bake engergy balls with it lately, and it has never let me down. It makes me look like a great creative cook!

    My favorite inexpensive, yet wonderful kitchen gadget is the Chopula – if you don’t know what it is definitely check into it! It can cut straight through an apple or potato, yet wont cut my fingers. It’s the thinnest spatula I’ve ever used, can use for crepes and to cut up things as they cook. It’s made to keep the important part up off the counter while it is at rest.
