Almond, Dark Chocolate & Sea Salt Cookies {plus BIG Giveaway!}

My two worlds have collided – and I couldn’t be more excited!  My “day job” in the music industry means I get to work with radio stations and artists across the country… I love my job! And, of course, I love playing in my Raisin & Fig “sandbox.” Today, I get to introduce you to the husband-and-wife team that make up the band Love & The Outcome.

A few years ago, Jodi and Chris – originally from Manitoba, Winnepeg – decided to pursue their musical dream. They sold everything they had and moved to the US.

Well that’s not completely true. That “sell everything” part excluded his favorite amplifier and her KitchenAid mixer. {That’s a girl after my own heart, right there!}

The sacrifices are paying off. Blessed with several hits and awards, Jodi & Chris just released a follow-up to their first album – it’s an EP called Ocean Way Sessions:Live.

I caught Jodi between a radio interview and hopping a plane to join a Caribbean cruise with fans. She was in her kitchen, making these awesome Almond, Dark Chocolate & Sea Salt cookies {using her KitchenAid, of course}.

Jodi is famous for these cookies. She often brings them to meetings with the band’s record label. When we talked, she and Chris were making a batch to take along on the cruise.

I don’t know how they found the time {did I mention they just released a live EP last week?!}, but they made a video just for you.

I was skeptical when Jodi sent me the recipe… I haven’t had a lot of luck with gluten-free baking. But these were simple and fabulous! The ones you see in the picture were gone about 5 minutes after I took the photo.

Almond, Dark Chocolate & Sea Salt Cookies
Serves: 18
  • 2 cups almond meal / flour
  • ¼ tsp soda
  • ¼ tsp sea salt
  • ¼ cup honey
  • ¼ cup coconut oil
  • 1 tsp vanilla
  • 1 cup finely chopped dark chocolate or chocolate chips
  1. Preheat the oven to 350º. Line a cookie sheet with parchment paper.
  2. Place almond meal and next 5 ingredients {through vanilla} in bowl of mixer and mix until combined well. Fold in chocolate chunks or chips. Dough will be somewhat crumbly.
  3. Roll into small balls and place on the parchment paper. Use the bottom of a glass to gently press down the cookies. If the glass is sticking too much, wet it with water on the bottom.
  4. Bake for 8 minutes, or just until done. Cookies will not brown much.
  5. Slide parchment onto wire racks to cool. Allow to cool on a wire rack before removing from parchment.
