Scottsdale is a great restaurant town!

So it’s with a little sheepishness that I confess to visiting the same restaurant multiple times in one visit. And a short visit, at that.  And, I do it almost every time I’m there.

Several years ago, Husband and I stumbled upon The Mission in Old Town Scottsdale.  And we were immediately hooked.  Sure, they do the tableside guacamole… and it IS terrific.  But their signature dish is their pork taco with handmade corn tortillas.  I think you’re supposed to share it.  Yeah, right.  The pork is so incredibly tender…  it’s served with a fabulous pineapple glaze, and three simple condiments that round out the flavors beautifully :: fresh cilantro, finely grated Cotija cheese and minced red onions.  Mix all that inside the fresh homemade tortillas for the most delicious appetizer you’ve ever had.  However, in my case, it’s my appetizer, entree AND dessert!

You know that question “what would you have for your last meal?”?  These pork tacos are at the top of my list.

I’ve attempted (unsuccessfully) to recreate the recipe to get me through the long lapses between visits.  But I’m getting close.  I’ll post it here when I get it right.
