Almond, Dark Chocolate & Sea Salt Cookies |
- 2 cups almond meal / flour
- ¼ tsp soda
- ¼ tsp sea salt
- ¼ cup honey
- ¼ cup coconut oil
- 1 tsp vanilla
- 1 cup finely chopped dark chocolate or chocolate chips
- Preheat the oven to 350ยบ. Line a cookie sheet with parchment paper.
- Place almond meal and next 5 ingredients {through vanilla} in bowl of mixer and mix until combined well. Fold in chocolate chunks or chips. Dough will be somewhat crumbly.
- Roll into small balls and place on the parchment paper. Use the bottom of a glass to gently press down the cookies. If the glass is sticking too much, wet it with water on the bottom.
- Bake for 8 minutes, or just until done. Cookies will not brown much.
- Slide parchment onto wire racks to cool. Allow to cool on a wire rack before removing from parchment.
